How to choose a good mixer – types and differences of mixers for home
Translated from English, the mixer means “mixer”. The name for the kitchen appliance is chosen very accurately: it mixes products into a total mass. In home and professional kitchens, the device appeared in 1919, since then the principle of operation of the equipment has remained unchanged. How to choose a mixer for the kitchen so that it does not gather dust on the shelf, but is a real helper?
Brief History
Before choosing a kitchen appliance, it’s good to remember the history of its creation. The first device for mixing ingredients appeared in 1919 in America, its creator was Herbert Johnston.
Legend has it that the inventor once saw bakers kneading bread dough. He understood how hard it was. The engineer decided to make life easier for the bakery workers, so he created for them an overall stationary mixer, which was immediately bought by all food factories.
Johnston decided not to stop there and designed the same device, but for domestic use. The device was received with a bang by American housewives, the demand for the device was huge.
Noticing the success of Herbert mixers, manufacturers vied with each other to offer customers new improved models. For example, Sunbeam Mixmaster produced the first devices with removable whisks: up to this point they were part of a monolithic design.
Until the 1930s, devices remained heavy stationary equipment, the appearance and ease of use also left much to be desired. American engineers were looking for ways to make mixers cheaper, sleeker, prettier, lighter. Gradually, the efforts brought results.
In 1952 the devices became manual. Their mass has decreased so much that the housewives could safely use the devices, holding them on weight. Transportation of the device also ceased to be a problem.
Types of mixers
Before deciding which whisking device you need for your home, it is important to understand what they are in principle.
Manual
This is a compact device with whisks and a handle. When working, housewives have to hold the mixer in their hands, but this does not cause any particular inconvenience. The buttons for switching modes and speeds are located on the case, it is convenient to press them even with the hand with which the user holds the device.
The submersible device can be used to prepare a semi-liquid mass for biscuit, pancakes, cream. But due to the low power, the device will not cope with tough dough and is not suitable for a professional confectioner.
The advantage of the hand mixer is its compact size, so it will fit even in the smallest kitchen. The device has a simple design, it is compatible with any dishes: the only requirement is that the depth of the container must match the length of the blades. An additional advantage of the device will be an affordable price.
Stationary
This is a mixer with a more complex design: a body and a container in which the products are mixed. The only thing the user needs to do is put all the ingredients in a bowl and select the mode: then the device itself comes into play.
Due to the high power, the equipment can handle even tough dough. For uniform mixing of ingredients, most stand mixers have a rotating stand. If you disconnect the working part from the stand, the stationary mixer turns into a handheld device.
The device has some shortcomings. It is heavy, bulky, takes up a lot of space on the kitchen table or in the closet: before buying equipment, you should prepare a place for it. Another disadvantage is the high noise level.
Planetary
In addition to the rotating platform, the mixer has blades for mixing products in a circular path. The blades resemble moving planets: this is how the name of the device appeared. This technology allows you to thoroughly and quickly mix the ingredients.
These are the most expensive models due to the extended functionality. Some devices have additions in the form of a grater or meat grinder, they work with any dough. Planetary mixers have a built-in timer to turn off after a certain period of time.
Power
Different types of mixers differ in power. This is one of the main characteristics. The higher the power indicator, the more dense the mass will be kneaded by the device and the more products will be mastered. At the same time, a more powerful device is more likely to be suitable for uninterrupted operation: in low-power devices, the engine will overheat after 5 minutes.
When choosing a model by power, remember:
- The minimum power of kitchen equipment is 250 W. Users can find high power devices – 700W;
- The most powerful and expensive devices are planetary. Since they solve different problems, the power of such models a priori cannot be lower than 600 W;
- Stationary equipment also has decent power – usually from 500 watts.
Materials
There are two types of materials used for the manufacture of devices for whipping ingredients:
- Plastic. This is a light, cheap material with its own drawbacks: instability to deformation, staining, scratches.
Decided to buy a mixer with plastic parts? See that there is no toxic smell of plastic: this will mean that the raw materials, and accordingly the device itself, are of poor quality;
- Metal – usually stainless steel. The material is resistant to cracks, intense loads, does not react with food. Metal appliances have one drawback: they require careful maintenance. On the stainless steel case, stains and fingerprints are very noticeable, so the surface will often have to be wiped;
- Glass. This is the most controversial material for making a mixer. Such devices are expensive, weigh a lot, they are unstable to shock – they immediately break. Of the advantages – an attractive appearance, ease of washing, safety: glass does not emit toxic substances, does not change the taste and smell of the ingredients.
Bowl capacity
This indicator depends on the number of people for whom the hostess will cook and the needs of the family. Usually the volume of the bowl is 2-5 liters. Ready for two people? You can choose a container with a capacity of 2 liters. For a family of 4, you will need a bowl with a volume of 3.5 liters or more.
Some mixers have two bowls. Usually they have different sizes, they are also made of different materials: one is made of glass, and the second is made of stainless steel.
Add another 500 ml to the size when choosing the cup size. If the volume of the container is 3 liters, the hostess can dispose of 2.5 liters. If you fill the bowl to the top, the contents will splatter.
Operating modes, number of speeds
The mixer can have from 2 to 10 speeds. The more modes, the more types of products the device can handle. Usually housewives use only 4 modes. And all other programs are designed for professional chefs.
Some devices have additional options:
- Slow start – gradual acceleration to the desired values against spilling the contents of the container;
- Pulse mode – by pressing the button, you can adjust the rotation of the mixer: the higher the pressure, the more the blades spin;
- Turbo mode – when the mode is selected, the device parts rotate at high turns.
Powerful devices are equipped not only with a lever for switching modes and speeds, but also with a touch panel and buttons. Usually this is more functional equipment: you can set the end time, start time.
Complete set
Basic complete set of hand mixers – hook, whisk. Some models have a blender attachment – a chopper bowl, a “leg”. Such a device automatically turns into a 2 in 1 device.
Table assistants are designed for a wide range of culinary experiments. In addition to the standard ones, they also have other nozzles:
- Spatula – for extracting, gently mixing the finished mass;
- For puree – the nozzle is suitable for preparing thick homogeneous masses, such as sauce;
- For mixing – for uniform mixing of ingredients;
- Combine – nozzle for rubbing, chopping, cutting vegetables for second courses, soups;
- Noodle cutter – with this device you can cook homemade noodles;
- Meat grinder – attachment allows you to grind meat into meatballs or meatballs.
If the attachment is not included, it can be purchased separately if the mixer is compatible with it.
Additional parameters
There are a few additional parameters that are important to keep in mind when buying a kitchen appliance:
- Cord length. A short wire reduces the mobility of the device. The longer the cord, the more comfortable it will be to use the mixer without connecting the carrier;
- Overtemperature protection function. If the device operates for too long without rest, it will automatically turn off to protect the engine from combustion;
- Indicators. The signal will remind you of the state of the device.
Tips: how to choose a mixer?
When choosing a kitchen device, consider the following rules:
- The table top mixing device must be stable. Therefore, be sure to check if it has rubberized legs. If yes, the device will be stable. If not, it will slide all over the table;
- Powerful mixers with a complex design are no better and no worse than simple models.
For everyday home use, a low-power device will suffice;
- If you plan to beat the products for a long time, check immediately for how long the mixer is designed for uninterrupted operation. For most devices, this interval does not exceed 8 minutes. For professional use, this will be too little;
- An important point is the fastening of the nozzles. In cheap devices, they are taken out and inserted without any extra effort, but this is an unreliable method of fixing. It is much better when the device is equipped with a lock for attachments: you can open it by pressing one button;
- The quality of a mixer can be judged by the sound. A good mixer works without extraneous sounds, it is not very noisy;
- For comfortable operation, you should choose handheld devices with a rubberized coating. Then the mixer will not slip in your hands, which also increases the safety of use;
- Decide where you will store your device before purchasing it. If you often transfer the device from the cabinet to the table and back, consider its weight and dimensions;
- For planetary devices, an additional convenience is a bowl with a tight-fitting lid, which avoids splashing of the mass when whipping.
For comfortable removal, you need a container with handles.
Sometimes users unknowingly decide instead of a mixer to choose another similar device – a blender or a food processor.
The blender is designed for grinding ingredients, while the mixer is for mixing and whipping products. Most blenders have a whisk, but it will only handle cream or eggs. The functionality of the mixer is wider: it works longer without rest and allows you to knead even tough dough.
A food processor will not be a full-fledged replacement for the “mixer”. Such a device has even more functions, but it is expensive and takes up a lot of space. If you need a device only for mixing ingredients, purchasing a combine will be an irrational purchase.
Instructions for use
In order for the mixer to last longer, it must be used correctly. Compliance with the rules will not only increase the life of the device. It will make it safer to use:
- Do not put clean plug-in attachments in the box until they are completely dry;
- Do not wash the motor housing.

- When using a mixer, it is important to focus on its technical capabilities. For example, if you whip thick mixtures with a low-power device, it will not only not cope with the task, but will also burn out;

Despite the fact that the blender is a relatively new appliance in our kitchens, it is already almost a hundred years old. The blender was created by American Steven Poplavsky in 1922 and was intended for mixing sparkling water with syrup. Outwardly, the first blender was a bowl with a rotating propeller inside, which, apart from mixing, could do nothing else.
The bartenders appreciated the stirring function. In the 1920s, there was a “dry law” in America – it was a crime to sell alcohol, but the cunning owners of drinking establishments and bartenders “hid” alcohol in cocktails. The invention of mixing drinks has become a good assistant in the preparation of cocktails. The novelty began to be popular first at the bar counters, and then took its place in the kitchens of Americans.
In 1935, another American inventor named Fred Osius completed Poplawski’s invention and introduced the world to the blender as we know it today. The Osius-designed blender was able to not only mix, but also chop, chop and turn food into puree.
The blender experienced its next evolution in 1950 thanks to the Swiss inventor Roger Perinjaquet. The Swiss patented his invention, which he called Bamix (from a combination of the French words “battre” and “mixer”, that is, to beat and mix). It was a rod-shaped device with a palm grip, a powerful electric motor, and a propeller cutting blade on the underside. Five years later, Périnjacé showed Bamix at an exhibition in Hannover. Later, this invention became known to the whole world under the names “hand”, “rod” or “submersible blender”.
